My mom is an expert baker. I can speak from experience.
Although I unfortunately didn’t inherit her superb baking skills, I did seem to acquire her knack for modifying and updating recipes to include healthier ingredients. We never follow recipes exactly and this easy muffin recipe is an example of that.
My mom has been baking these apple raisin muffins for years and when I asked her for the recipe, she told me she would have to write it down as she had adjusted the original recipe so much that it was a completely different muffin! And so, Mom’s Easy Apple Raisin Muffins were born.
These muffins are easy to make and are the perfect snack for my daughter’s lunch box. They freeze well and are a great breakfast on the go, loaded with apples, carrots and sweet raisins. Give them a try – your family will love them!
INGREDIENTS:
- 1 cup all purpose flour
- 1 cup whole wheat flour
- 1 and 1/4 cups of white sugar
- 2 teaspoons of baking soda
- 2 teaspoons of cinnamon
- 1/2 teaspoon salt
- 3 eggs
- 1 cup sunflower oil
- 2 teaspoons of vanilla
- 2 cups of finely grated carrot
- 3/4 cup raisins
- 1 large apple (peeled, cored and grated)
